
2011 Merryvale Late Harvest Riesling, 375ml
Winemaking
Although a challenging vintage for late ripening table wine varietals, the 2011 vintage created ideal conditions for this late harvest desert wine. The clusters were selectively harvested to include fruit affected by the desireable ‘Noble Rot’, which concentrates the sugars and flavors as well as providing a candied fruit note on both the nose and palate. These clusters were brought to the winery and sorted again before going to the press. Very small yields were achieved, and this nectar was put to barrel for a very slow fermentation. An equilibrium between the alcohol and residual sugar arrested fermentation and the wine was aged for two years in barrel before going to bottle. This wine is the culmination of unusual conditions in the vineyard and precise winemaking in the cellar, and we are please to offer this rare wine.
Tasting Notes
A dessert wine that will compliment any post meal offering, or can be served by itself instead. This Boyrytis desert wine is a beautiful golden caramel color with aromas of apricot, honey, ripe pear and citrus wine. On the palate it has a restrained sweetness with good weight and body, but balanced with refreshing acidity. Serve chilled and complete an indulgent meal in style.
