2019 Merryvale Cabernet Sauvignon Reserve

Winemaking

Our second bottling of Reserve Cabernet Sauvignon is a stunning blend of Cabernet Sauvignon and Cabernet Franc, sourced from our Profile Estate Vineyard on the ridges of Conn Valley overlooking St. Helena. The fruit was hand harvested at night to retain freshness and acidity. After a 5 day cold soak, the wines began native fermentation in a combination of oak and stainless steel. We completed two pumpovers per day, until dry, and pressed between 14-21 days. Spontaneous malolactic fermentation occurred in barrel, 100% French oak, 80% new. The wine was bottled unfined and unfiltered.

Tasting Notes

Classic Napa Cabernet aromas of savory red fruits, currants, dried herbs and sandalwood. On the palate, intriguing flavors of Mediterranean olives, cocoa and Madagascar vanilla. Seamless, polished tannins lead into a long finish. A young wine, it will evolve in the glass and bottle. Enjoy this wine with roasted and grilled meats, hearty vegetables and rich, savory pasta dishes. Enjoy over the next 10+ years.
